8 Fresh and Yummy Snacks You Need to Stock Up On This Spring
As the days get longer and the air gets warmer, my cravings transform from hearty dishes to something lighter and brighter! During the Spring and Summer time I love snacking on foods that keep me hydrated, use minimal ingredients, and taste delicious!
Here are 8 of my favorite Spring snacks that are healthy and super simple to make:
1. Rice Paper Spring Rolls

This Vietnamese style snack is the best for a sunny Spring day. All you need to do is wrap fresh veggies like cucumbers, carrots, and bell peppers with a protein of your choice (I like either shrimp or tofu) in rice paper.
In my opinion, peanut sauce is the ultimate dipping sauce for this snack, so here is an easy recipe for one:
Peanut Sauce Recipe:
ingredients:
1/2 cup creamy peanut butter
1/4 cup low-sodium soy sauce
2 tablespoons rice vinegar
2 tablespoons honey
1 tablespoon grated fresh ginger
1 garlic clove, minced
1/4 teaspoon cayenne pepper (optional)
1/4 cup warm water
Instructions:
In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, ginger, garlic, and cayenne pepper (if using) until well combined.
Slowly whisk in the warm water until the sauce reaches your desired consistency.
Taste and adjust the seasoning, adding more honey or soy sauce as needed.
Serve the peanut sauce immediately or store it in an airtight container in the refrigerator for up to a week.
2. Spicy Pineapple Guacamole

This easy snack only requires 4 ingredients:
1 can of rinsed and dried chickpeas
1 tbsp. of extra-virgin olive oil
2 tsp. of chili powder
1/4 tsp. of salt
Combine the ingredients above and place into an air fryer at 370° F for about 12 minutes or until the chickpeas turn golden-brown.
I love making this recipe in bulk and storing it for up to a week so I can use it in salads, bowls, or just as a poppable snack on-the-go!
4. Apricot, Goat Cheese, and Almond Bites

As someone with a raging sweet tooth, I am really passionate about the ultimate peanut butter and chocolate combo. However, including banana into this duo makes it even better with the sense of creaminess and additional sweetness!
These frozen PBBC cups are the BEST sweet tooth craving for a Spring day and are very easy to make!
Simply spoon melted chocolate to the bottom of baking cups, top with a slice of banana and a scoop of peanut butter mixed with coconut oil. Then, top each nugget with a dollop of chocolate. Freeze for twenty minutes, and enjoy!
7. Blood Orange Chia Pudding

This tangy and fresh snack or breakfast is my favorite on an April morning! I love to eat blood oranges during the Spring season, and combining it with my customary chia seed pudding is the best twist!
I use the recipe from Eat The Grains and mix all the ingredients in a jar rather than in a food processor.
I also like adding a dash of vanilla and sea salt in the pudding base and topping this snack with fresh berries, hemp seeds, and granola!
8. Healthy Cheesecake Stuffed Strawberries
