8 Fresh and Yummy Snacks You Need to Stock Up On This Spring

As the days get longer and the air gets warmer, my cravings transform from hearty dishes to something lighter and brighter! During the Spring and Summer time I love snacking on foods that keep me hydrated, use minimal ingredients, and taste delicious!

Here are 8 of my favorite Spring snacks that are healthy and super simple to make:

1. Rice Paper Spring Rolls

This Vietnamese style snack is the best for a sunny Spring day. All you need to do is wrap fresh veggies like cucumbers, carrots, and bell peppers with a protein of your choice (I like either shrimp or tofu) in rice paper.

In my opinion, peanut sauce is the ultimate dipping sauce for this snack, so here is an easy recipe for one:

Peanut Sauce Recipe:


  • 1/2 cup creamy peanut butter

  • 1/4 cup low-sodium soy sauce

  • 2 tablespoons rice vinegar

  • 2 tablespoons honey

  • 1 tablespoon grated fresh ginger

  • 1 garlic clove, minced

  • 1/4 teaspoon cayenne pepper (optional)

  • 1/4 cup warm water


  1. In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, ginger, garlic, and cayenne pepper (if using) until well combined.

  2. Slowly whisk in the warm water until the sauce reaches your desired consistency.

  3. Taste and adjust the seasoning, adding more honey or soy sauce as needed.

  4. Serve the peanut sauce immediately or store it in an airtight container in the refrigerator for up to a week.

2. Spicy Pineapple Guacamole

This is a fun and flavorful twist on the fan favorite dip that packs some heat from the peppers, sweetness from the pineapple, and a creamy texture from the avocado.

All you need to do is make your favorite guac recipe, but add in diced pineapple pieces, diced jalapeño peppers, and a dash of tajin seasoning!

This dip is an obvious companion to tortilla chips; however, it also pairs well with veggie sticks, eggs and toast, or on tacos.

3. Air Fryer Crunchy Chili-Spiced Chickpeas

Crispy on the outside and tender on the inside, these snack-able chickpeas are delicious as a crunchy topper for salads, creamy soups, or grain bowls, too.

This easy snack only requires 4 ingredients:

  1. 1 can of rinsed and dried chickpeas

  2. 1 tbsp. of extra-virgin olive oil

  3. 2 tsp. of chili powder

  4. 1/4 tsp. of salt

Combine the ingredients above and place into an air fryer at 370° F for about 12 minutes or until the chickpeas turn golden-brown.

I love making this recipe in bulk and storing it for up to a week so I can use it in salads, bowls, or just as a poppable snack on-the-go!

4. Apricot, Goat Cheese, and Almond Bites

Goat cheese is one of those foods that simply screams 'high-class.' Pairing this tangy cheese with sweet apricots and a drizzle of balsamic vinegar is nothing short of luxurious.

These apricot bites are the best Spring party appetizers.

All you need to do is spread your preferred goat cheese on a dried apricot, top with an almond, and drizzle with olive oil and balsamic vinegar.

They're easy, they're healthy, and they're bound to impress all of your friends!

5. Carrot Cake Energy Balls

In the Spring we must embrace everything carrot! Try these wonderful vegan and gluten-free carrot cake inspired energy balls to satisfy that sweet tooth!

This is my favorite recipe for this springtime snack that is ensured to prepare you for the season!

I recommend snaking on these bites during a mid-day slump to provide you with some energy and the dopamine from a sweet treat!

6. Frozen PBBC Cups (Peanut Butter, Banana, and Chocolate)

As someone with a raging sweet tooth, I am really passionate about the ultimate peanut butter and chocolate combo. However, including banana into this duo makes it even better with the sense of creaminess and additional sweetness!

These frozen PBBC cups are the BEST sweet tooth craving for a Spring day and are very easy to make!

Simply spoon melted chocolate to the bottom of baking cups, top with a slice of banana and a scoop of peanut butter mixed with coconut oil. Then, top each nugget with a dollop of chocolate. Freeze for twenty minutes, and enjoy!

7. Blood Orange Chia Pudding

This tangy and fresh snack or breakfast is my favorite on an April morning! I love to eat blood oranges during the Spring season, and combining it with my customary chia seed pudding is the best twist!

I use the recipe from Eat The Grains and mix all the ingredients in a jar rather than in a food processor.

I also like adding a dash of vanilla and sea salt in the pudding base and topping this snack with fresh berries, hemp seeds, and granola!

8. Healthy Cheesecake Stuffed Strawberries

This dessert/snack is so fun to make with friends and family and is a delicious alternative to a heavy slice of strawberry cheesecake.

Just carve out a hole in each strawberry and stuff with a mixture of cream cheese, honey, and vanilla. Then, dip the filled strawberries into a plate of crushed graham crackers and freeze for about 20 minutes!

This super easy and fresh snack is guaranteed to satisfy your sugar cravings and maintain your health goals!

All of these snacks are delicious but still maintain a whole food aspect and avoid processed sugars and excessive ingredients!
